Gretel’s Gingerbread Cookies

8 Tablespoons unsalted butter, melted
1 egg
1/4 cup honey
1/2 teaspoon allspice
2 teaspoons ginger powder
1/2 teaspoon clove powder
1/2 teaspoon cinnamon powder
1/8 teaspoon peeled and grated fresh ginger
1 teaspoon baking soda
3 cups almond flour, or more as needed

Preheat the oven to 350°F. Grease a cookie sheet.
Mix all the ingredients together in a bowl, until the dough is dry enough and not sticky to work with. You can add more almond flour if necessary. On the cookie sheet, form 1 1/2- to 2-inch circular mounds with the dough and press down lightly to form into a cookie shape. bake for 10 to 15 minutes, or until the edges turn golden.
