Lemon Cookies

From the cookbook Recipes For The Specific Carbohydrate Diet

4 Tablespoons unsalted butter, melted

1/3 cup honey

1 teaspoon lemon zest

1/8 teaspoon baking soda

2 1/4 cups almond flour

Preheat the oven to 350°F. Grease a cookie sheet. Mix all the ingredients together in a bowl. The batter should be moist. Roll the batter into small 1/2-inch balls. Set the cookies on your cookie sheet and space evenly apart. Press down and flatten. Bake until golden, 10 to 15 minutes. Allow to cool.
