Yummy mock Twinkie cupcakes without all the additives or preservatives!

2 1/2 cups sifted flour
3 tsp baking powder
1/4 tsp salt
3/4 cup butter softened
1 1/2 cups milk
1 cup sugar
4 eggs separated
1 1/2 tsp vanilla

Sift flour, baking powder, and salt together in a large bowl.  Add butter, milk, sugar, vanilla, and egg yolks.

Beat egg whites on high-speed until stiff peaks form. Slowly and gently fold egg whites into cake batter.

Pour cake batter into lined muffin tins and bake at 350 for 18-20 minutes. Once completely cool top with White Mountain Icing.
