We have not been able to eat salad in a few weeks due to being in the early stages of the SCD. In honor of being able to eat salad again I made my version of a Apple Avocado Waldorf Salad.

2 apples peeled, cored and diced

2 avocados diced

6 pieces of romaine lettuce torn into bite sized pieces

2 stalks of celery thinly sliced

1 lemon juiced

1 lime juiced

1/4 cup extra light olive oil

1 Tablespoon honey

Toss the first four ingredients in a large bowl, set aside. For the vinaigrette combine the rest of the ingredient well. Drizzle the desired amount of vinaigrette over the salad and serve. Enjoy!

From the cookbook Recipes For The Specific Carbohydrate Diet

4 Tablespoons unsalted butter, melted

1/3 cup honey

1 teaspoon lemon zest

1/8 teaspoon baking soda

2 1/4 cups almond flour

Preheat the oven to 350°F. Grease a cookie sheet. Mix all the ingredients together in a bowl. The batter should be moist. Roll the batter into small 1/2-inch balls. Set the cookies on your cookie sheet and space evenly apart. Press down and flatten. Bake until golden, 10 to 15 minutes. Allow to cool.

8 Tablespoons unsalted butter, melted
1 egg
1/4 cup honey
1/2 teaspoon allspice
2 teaspoons ginger powder
1/2 teaspoon clove powder
1/2 teaspoon cinnamon powder
1/8 teaspoon peeled and grated fresh ginger
1 teaspoon baking soda
3 cups almond flour, or more as needed

Preheat the oven to 350°F. Grease a cookie sheet.
Mix all the ingredients together in a bowl, until the dough is dry enough and not sticky to work with. You can add more almond flour if necessary. On the cookie sheet, form 1 1/2- to 2-inch circular mounds with the dough and press down lightly to form into a cookie shape. bake for 10 to 15 minutes, or until the edges turn golden.
